Gopal's latest addition to his creations. Originating from Mangalore in South India, this is fruity curry specially made with Bowen mango and a sublime flavour of fresh curry leaves and mustard. Best with chicken or seafood particularly goes well with scallops and prawns. Any fish which firms up after cooking is a great combination with this dish.

Ingredients: Mango pulp, onion, sugar, salt, coconut, ginger, garlic, chilli, spice mix and fresh curry leaves. 

Recipe: Chicken Mango

Serves 4

Fry 1 small slice red onion until soft. Add 800gms of chicken cubes and fry until the meat is seared. Mix contents of the Curry Creations Mango Curry sauce and simmer for 10 minutes. Add 200 gms of coconut cream and cook further until the chicken is tender. Garnish with fresh coriander. Serve with steamed rice.

TIP: Mix of prawns, fish and scallop can be prepared the same way. With seafood stir fry seafood first before adding it to the red onion sauce. Seafood only needs to be cooked for 5-7 minutes.
